Il menu dell’agriturismo Podere Casino è il risultato di decenni di passione tramandati di generazione in generazione.  Esempio di questa tradizione è il saporito sugo Edda.

Edda, nonna del nostro cuoco Ottavio Natali, venne a conoscenza della ricetta di un sugo dal sapore forte e deciso nei primi anni ’80 da un amico di famiglia. Con l’idea di renderlo ancora più originale e gustoso, Edda stravolse la ricetta originale e ottenne così un sugo completamente diverso che non venne nemmeno riconosciuto dal palato dello stesso amico di famiglia.

Con gli anni il sugo Edda divenne un pilastro della cucina dei Natali e viene tutt’oggi proposto nel menu. Il sugo Edda è costituito da pancetta affumicata sfumata con del brandy, a cui vengono aggiunti in seguito pomodori pelati e altri ingredienti. Tra questi ultimi c’è un altro liquore che viene lasciato sobbollire nel sugo per un’ora e mezza. Il sugo viene in seguito servito con pepe e peperoncino per dare un sapore ancora più intenso.

Il nostro cuoco Ottavio abbina al sugo i maccheroncini di rapa rossa oppure le tagliatelle verdi con impasto agli spinaci. Entrambe le paste vengono realizzate artigianalmente al Podere Casino.

The Podere Casino farm menu is the result of decades of passion handed down from generation to generation. An example of this tradition is the tasty Edda sauce.

Edda, grandmother of our cook Ottavio Natali, learned of the recipe for a sauce with a strong and strong taste in the early 80s by a family friend. With the idea of ​​making it even more original and tasty, Edda twisted the original recipe and thus obtained a completely different sauce that was not even recognized by the palate of the same family friend.

Over the years the Edda sauce became a pillar of the Natali cuisine and is still offered in the menu. Edda sauce is made of smoked bacon with brandy, which are then added peeled tomatoes and other ingredients. Among the latter there is another liqueur that is left to simmer in the sauce for an hour and a half. The sauce is then served with pepper and chilli to give an even more intense flavor.

Our cook Ottavio combines the sauce with red turnip macaroni or green tagliatelle with spinach dough. Both pastas are handcrafted at the Podere Casino.
